Bear roast?

Okay we already went through 6 bear steaks. One of my kids ate almost all of the meat and it was pretty tasty. I cut the other one up into strips for fajitas we are going to do.

 

I have two quarters (one front one back) I am trying to figure out how to prepare. I am leery about throwing them on the grill for a few hours on low. Can this be done or will I dry the heck out of it?

 

I was also interested in maybe smoking them but I don't have a smoker. If someone in the Chandler area was really into smoking I would be happy to bring them both over and you could keep one for your efforts and smoke the other one for me.

I had to do a crock pot with mine. I must be a poor cook. It was the only way I could get it truly tender but the kids loved it.

There's a parasite? Tric???? Something I can't pronounce. That they may have if not cooked to a certain temp. For a recipe.... Grill a whole roast til browned, chared, and medium. Put in a Dutch oven or crockpot, with paprika, roasted garlic, salt, onion powder, cumin, and ancho chilies. Stew for a few hours and then you have pulled bear, tamale bear, burrito bear, shredded taco bear, etc! I made some pulled BBQ bear on a pizza once and even the hippies the wife had over ate it no questions asked.

I use the green chile recipe out of the recipes portion of this site. Excellent results. I have fed it to many a city dweller without ever telling them a thing. They always ask for seconds :)

Crock pot is a good idea but I was being lazy and looking for a way not to debone them.

okay then I guess I will debone it, either that or I gotta find a 5 gallon crock pot so it will fit.
