Dove Tacos

I tried something new with some Dove last night. I marinated the Dove in Italian dressing for about a week. I cut the Dove into small pieces. I added some mild jalapeños and bell peppers from the garden. I cooked them for about a minute and they were done. They tasted Amazing!

Next time I will add some cabbage and a little chunky salsa.

I cut the breast off the bone and salt and pepper them, then soak them in lime juice, and tequila.

If you haven't checked out Hank Shaw's website on wild game cooking....he has a great dove enchilada recipe. It's simple and turned out really good when I made it a few weeks ago.

I just thought of it, but cut them up smaller, add chorizo, eggs, cheese and some home made salsa for a breakfast burrito
