Chicken fried Javelina Backstrap

Awhile back Shelvin gave me the meat from his javelina. I made a bunch of chorizo from it and then wanted to cook up the backstrap. I wasn't sure how I wanted to do it this time, so I used google to search for recipes and found one from the CWT forum that Coach posted about six years ago. That was the ticket! Thanks Coach....

 

This was awesome! I used chickpea flour and some cajun seasoning and it turned out so good that it barely made it onto plates before we ate it! Finger lickin' good and so tender!

Looks great. Chicken fried backstraps will make a game meat hater a game meat lover. It turned my wife right over.
