Ever seen this javelina preparation?

It looks like a great way to SPREAD the funk.

 

I stick to skinning from snout to tail. Changing knifes and gloves Multiple times. Only then do I gut.

 

Why do you gut them?

I gut them in the field to bring home the rest. There is not really a lot of meat on a javi. I use that method to get the most possible and to have very little loss.

 

We love the meat. It all goes to homemade chorizo.

Just bone them out and leave the carcass for the desert to consume. No need to gut.

Just easier is all, and saves a few steps. But I get that everyone has their preferred methods.
