Tips for Elk Ribs and the Gutless Method?

I picked up a leftover cow tag and I think it might be nice to get some different cuts if I tag one. Does anyone have experience with taking the rib rack off an elk while doing the gutless method? Looking for tips on what works best. Maybe saw them off at the vertebrae or chop with a hatchet? I'm thinking if I can get the ribcage off I can also harvest the skirt steak, the hanger steak, and cut some short ribs.

Thanks, but I want to keep the bones in the ribs.

Go old school and quarter it if you want all the bones. If you can drive to it and have a tree. or roll the guts and saw what you want. Grind the rib meat and buy some good ribs from the store.

Why not just gut it? Makes getting the heart and liver easier as well.

Yes i say gut it and take all the meat.

Taking the ribs out without removing the guts would be like poking a water balloon with a needle and expecting it to stay intact. It doesn't happen. Easiest solution to accomplish what you want is gutting and hanging by a nearby tree.

I just drink it right from the tap.
