    It was a 21lb rib roast from Frys Christmas sale last year. I cut half into ribeyes and smoking the other half today for various meals.

    What’s your meat prep? I’ve done it a few times and have always done a brine/cure on the brisket for 7-10 days then smoke and steam. Curious how it’s supposed to be done?

    Dinner tonight......Yellowtail I caught last year. Ghee with herb, garlic, salt, pepper, dash of soy sauce, and pinch of cayenne.  Grilled asparagus with simple cracked pepper and a pinch of the ghee.  Mashed potatoes and herbs.

    My/grandpas chicken marinade is the same except no siracha, orange juice concentrate instead of oranges, and a cup of bourbon. Oh, and garlic! Good mix bro!
