Just bought a Traeger and really?

I'm going to have to try that spatchcock style one day. Do you do it straight on the grill or in a pan?

No pan, straight on the grill of the smoker. They took about 5 hours to hit 165. I did 2 birds non-spatchcock and it was 12-13 hours.

That's a matter of preference but I like hickory.

I will be using mesquite and oak.  The mesquite for flavor and oak for coals.  It is a stick burner though. 

Pellet grill will be for the sides.

I like Cherry if you are able to find some but Hickory, apple, pecan, oak, mesquite or even a mix.

With beef I always use mesquite. Pork I like hickory and chicken I like apple. Fish I like alder but it's sometimes hard to find.

I haven't gone pellet  but I do a lot of smoking in the green egg. Mesquite or pecan for beef and citrus is good with fish and fowl.

I like mesquite but you have to be careful. Its strong and can get bitter real fast if you over do it.
