Elk Heart

After harvesting my first bull I decided I would eat the heart. After a lot of searching I couldn't find a recipe that really grabbed me so I decided to make up my own.

 

I sliced the heart up into strips and nuggests, cutting off all the white parts and valves/arteries or whatever they were LOL.

 

Got a pan going with coconut oil

Dipped the pieces in egg

Rolled them in a mixture of coconut flour and almond flour and fried on each side till golden brown (meat was pretty rare)

Served and ate hot! FREAKIN' DELICIOUS!!!!!!! I couldn't believe how good the meat was and the crust I made was perfect for it.

Hearts are fine table fare. I clean/slice/roll in flour and fry. I usually eat them for dinner the night i get them. Kind of a ritual

Fried heart and eggs. One of the best breakfast you can have

Without a doubt. Don't forget hasbrowns with it. Crazy good.

Gotta say, between my sons and I, lots of elk, deer, etc. Haven't eaten a heart but next time I'll try it. Liver - no way. I know mine alone would kill half of Cambodia.

Last one I cooked I cleaned and removed pericardium 1/4 the heart added onions and peppers and tied it with string added 505 chili to outside and baked to 160 internal temp it was great
