Sinewy/Tendon Meat?

Trim the silver skin out.  It takes time but its worth it.  Ram meat is delicious, somewhat chewy, yes.  But you worked hard for every ounce of that, enjoy it!

I grind it, cut as much as I can out. My big LEM grinder will grind anything.

For sinewy cuts there are two options imo:

1. Trim out the larger tendons and grind it up fine with the correct amount of pork fat. You might have to run it through a coarse die, get the meat icy cold again, and then run it through the fine die and mix with chorizo spices or breakfast sausage spices. 

2. Cook the peice whole in a crockpot, insta pot, or oven. I do this with shanks and necks. Plenty of good recipies at https://honest-food.net/

I grind it, mix with beef fat and make spicy snack sticks out of it.

LEM stuff is the bomb, just used  my new dehydrator and jerky cannon today that they  they make.  Makes my old jerky gun  and dehydrator look like the daughters Easy Bake Oven  from her childhood.  I’ve had their 3/4 hp grinder for years , run lots of meat through it.  Had to replace a blade or two when someone put it in backwards. Solid stuff.

If you get one make sure it’s rated in a hp not watts.

Your processor makes hamburger out of it.....just saying. They a filleting Jack out of. Hunk and chunk in the grinder it goes.
