Test run before I make dads first elk dinner with his first elk harvest. No pressure right? I have never been nervous cooking anything but for some reason this dang elk has some weird pull on my heart. Anyway the backstrap was thawed out and vacuum sealed with tons of butter, salt, pepper, and fresh rosemary. Sous vide at 120 for 2.5 hours or so. Tossed it on a super hot grill just to bring the center temp up slightly and mark the outside. Sliced it up after a 20 min rest. Served with grilled carrots and onion carrot puree' as well as fried potato slices with potato roasted garlic puree' and the whole deal was topped with hollandaise sauce.

Thanks for the reminder turbo, New Years resolution not working out so far, getting some pull ups in but no push or sit ups. Still running well and leaning out. Off for a hike at the lake today with a picnic surprise in my pack for the wife. Oh and the 25 lb weight is still in there too.

I believe Sitka may have some but that company is so over priced I would never buy them. Also I believe Kifaru is getting close to releasing new zip off puffy items. I'm surprised first lite doesn't but I've never checked, we just take a break and strip down.

Ya I always keep my fillets whole or in a size that fits the people eating. I cut some of my steak whole as well from dads elk so I'll cook them whole as well then slice at the table. One thing I noticed in the recipe is the rest time is too short, I would go 20 min minimum and more on bigger cuts. Have you ever tried water bath or sous vide ? With these lean game meats it works really well.

Looks tight for 2, is the sawtooth bigger? Pretty sweet set up for 2 dudes. Any idea on weight of just tent ?

You should copy an image, I can't find a paratipi. Only paratarp or sawtooth or supertarp What kind of size is that? 2 guys? 3? 1 guy and gear? How does it compare to supertarp or sawtooth?

So your saying due to how I say something or how I spell something I don't mean what I meant? What I meant to say was that I mean what I typed weather I spelled it the way I meant it or meant to spell it the way I mean it.

Just an abbreviation it still means the same thing. Sorry to say bust the majority don't celebrate Christmas for Christ, they do it for family time and presents.

We had the same issue but no bucks. Only does and not very many. Zero rut activity. I will say in November we had bucks sparing but that's normal. I've seen it both ways this time of year, right about now I've seen hard rutting and nothing as well. Mostly we try to hunt later in January and see more consistent rutting. Heading out next week to do some checking for a longer hunt. As for the cold it was 10 degrees in the morning when we crawled out of the tent. Not sure they need that to kick it in.

Paper is safer for the long run. Vacuumed bags can bang together and poke holes in the plastic. With this much meat it's more of a possibility, more than I'm used to. Listening to Steven Rinella he does a lot more meat than me and he suggests this so long term I'm going that way. Really if your careful may not be a big deal.

I'm leaning towards garlic Parmesan. I do have a package deal from cabelas for hunter blend that's always good. Oh and I used a sawzall to cut the shanks and it sucked. Definitely doing the hand bone saw next time.

Ya dude tell the wife and get the one you want. My wife would have just shopped online with me and called that a gift because she knows I am analytical about gear and would never attempt to buy me a surprise. Cudos to your wife for giving it a shot. It's not like she gave you her dads hairloom drill. Haha

The way to fix the sideways pics is simple. Just go to the pic on your phone and go into edit then save. Don't know why but you don't have to edit it just save in edit and it will come in to the site correct.

Made a few days with the backpack and were treated to a show by Space X launching a rocket.
