    Venison Mash

    Not sure why I call it that, but that is what comes to mind when I make this dish. Made a bunch last night into different forms, and it was excellent! I used three pounds of ground venison, 3 zucchini shredded, 2 squash sliced and quartered, brown rice, some seasoning, about 6 or 7 large tomotoes peeled (to remove that curly skin that ends up in your teeth at the end!) and diced finely. Mixed everything together and made 5 large stuffed bell peppers, 3 loafs and a skillet. Bells and loafs cooked for about one hour. Skillet took about 15 minutes. Everything was so tender and soft!!!!! Vaccum sealed and froze up the loafs and will use those as quick meals or camping meals. Stuffed bells were sealed and frozen individually except for two which are today's lunch. Skillet was last night's dinner and today's lunch for kids and wife. TJ, I tried to call you to drop some off hot last night, but I got your answering machine and left you a message. Sorry buddy! Wanted to surprise you and Peg after a great turkey season for both of you!!! Enjoy the pictures, the real thing tastes better though!!!

    Stuffed bell peppers with venison

    Alright, tried something without a real recipe that I have never done before: stuff bell peppers. Basically, I picked up over 75 pounds of fresh vegetables yesterday at a market and decided to do something fresh with it! Gave away about 50 pounds to friends, family and neighbors. Still had a TON left! Decided I had to try some new recipes to change things up around the kitchen for the family. FIRST time cooking with zucchini! I used ground venison, fresh shredded zucchini, fresh tomatoes, chopped garlic, brown rice and fresh bell peppers. Mixed everything together and stuffed the peppers, then oven baked them for almost one hour. Not bad for a first time making stuffed bells!!! Very moist and did not hold together like a brick similar to meatloaf. Fell apart when you grabbed a fork-full. Then I took some fresh green beans and sauteed them in olive oil and a special spice blend similar to Lawry's. Sorry the pic only shows a few, that was all that were left for the picture after eating them straight from the pan! Tasted like REALLY fresh and yummy fries!

    Scooter, I have the late Nov hunt for bulls, same as last year. Tough hunt but I scored last day. Was solo camping but knew other hunters from this site. Feel free to let me know your plans and maybe we can hook up. In fact, anyone who has that tag, same plan if interested. Maybe we can plan a mid hunt get-together to share updates and sightings.

    Start scouting now. That unit is full of cows. Have taken cows in that unit before and getting off roads is just as important as finding areas that hold more elk than others.

  24. Very cool video! I really appreciate these types of projects. With the population growth coming into Arizona, many of these populations have been destroyed or limited genetically. These supplements and supplanting of healthier populations into areas of need will genetically assist the long-term future of these populations!
