  1. Decided to try something a bit different with the turkey I harvested this spring.  This recipe is similar to the dove bites that have been posted on here a few times.

    1.  Dice turkey breast into approximately 1.5 inch cubes.

    2.  Season with cayenne pepper, chili powder, granulated garlic, salt, pepper, and olive oil.

    3.  In a separate bowl melt butter and mix with brown sugar. Set aside for later.

    4.  Wrap seasoned turkey cubes with a slice of jalapeno in bacon. (Hold together with toothpicks)

    5. Grill on low heat until bacon is almost done.

    6.  Once bacon appears to be almost done use a brush to baste the melted butter and brown sugar on the bites.  Make sure and keep the temp on low and watch the grill since the sugar can burn easily.  The butter and sugar will start to caramelize on the grill.

    7.  Once the bites are caramelized it's time to add your choice of BBQ sauce on the bites or you can serve BBQ sauce on the side and enjoy.

Pretty happy with the results.  Turned out delicious!!! Lots of layers of flavor between the sweet and hot ingredients.

  3. My favorite hunt!!! My son has the same tag.  You shouldn't have any problem locating some cows.  The small bulls are definitely still screaming and give away locations. Make sure your niece gets lots of shooting practice in and you will be good to go.

  4. This is what I did with my coues. If you really want to distinguish it put cactus as part of the habitat.  Kinda depends what unit you shot it in too.  If you have pictures of the landscape where you hunted maybe provide them to the taxidermist so they can select habit for the mount that matches.

  5. Biggest problems with the online system.

    1.  Having to enter all the same in information for every species you apply for (lic number, address, dob, ext....) This especially sucks during the deer draw cycle!!!!

    2. Also I would like to see an option for a second credit card on file as a backup in case the primary doesn't work.

    3. Finally there should be one question on the application about if you plan to hunt by power lines.
