I have not done it, but my nephew has been doing in the past couple of years at our BIG family Christmas dinner. In addition to our traditionally roasted standing rib roast, he has been doing a smaller one on the side Sous Vide style. It is amazing!! I don't own the set-up, but thinking I'll add to my kitchen gadgets soon. I have some bison roasts that might take well to that method. Regarding not being masculine enough....... FORGET THAT!!!! I say cooking your game meat anyway you want is cool stuff!!! -

Solid indeed, Hector! And NO turquoise!!! My buddy's wife also joined us on the hunt. She is a bit of an artist, and said she would love to paint a scene on it. I'm sticking with classic clean bleached-white!

Sean's son (Draysen) once again did some AMAZING work!!! Kudos on a job well done! (He is also a pretty cool young man, respectful with a firm handshake! Being raised right, I believe! ) So happy with the way it turned-out. S. BIG head!!!!! Chair is not it's final resting place. Ordering a hook/hanger for the wall. 10-4 on the table fare!! Been experimenting and enjoying. Also point taken on the potential "cow skull" comments! 😂 I'm having a rug done with the hide, which I'm planning on displaying in close proximity to the skull. Hopefully folks will connect the two dots on their own. (Plus, virtually anyone I let in my house already has heard the story of my bison hunt several times! ) S.

Bison tenderloin, sauteed shitake mushrooms, baby broccoli, and mashed red potatoes. (For the record, this was just ONE of the tenderloins from the bison. They are HUGE! LOL) Cast iron seared, then finished in the oven until medium-rare/medium. Pics could have been better, but they were taken as an afterthought. Yes, that is a BIG chunk of REAL butter on those potatoes!!!

Field & Stream and Outdoor Life Maybe No longer

Ya, like others here I used to LOVE Outdoor Life and Field & Stream. Late 70s to early 80s while a teen I had a subscription to Field & Stream, and one of my best friends (and closest hunting buddies, still today...) had a subscription to Outdoor Life. We would share the magazines back and forth, and sit around reading the articles and imagining being on those hunts! Often while listening to Van Halen's epic first album!!! -
Some of my favorite memories come from that Kiabab doe hunt!!!! Soak it up and take lots of pics for the memories!!!!!! Regarding the weather, I agree with bigorange! Looks like it will be perfect!! Funny you mention "the freak snowstorm....". Big +1 on that!!! I have been surprised fairly often by a snowstorm on that hunt. Often just flurries, but good to be prepped none the less. Enjoy!

Thanks! For sure, 2 1/2 hours is better than all day (or all season)! For processing, I generally do my own butchering on all animals. For this one, my buddy and I spent several hours the day after the kill de-boning and sorting the cuts. I ended-up giving him a large portion (like > 3rd) to take back to Salt Lake with him. For the share I brought home, I spent last Monday morning cutting & wrapping the standard cuts. After handling the standard roasts/steaks/chops/cuts, I was left with about 80 pounds of 'trimmings' . I wrapped about 30 pounds of the trimmings into 1 & 2 pound stew-meat freezer packages. I don't have a grinder, so I took about 50 lbs over to Miller's Southwest Processing to have ground into burger. Miller's was pretty quick, so I picked-up the burger on Saturday. My son and I enjoyed buffalo burgers while watching football yesterday. Was awesome! Now that I've got it all sorted and frozen, I'm going through all of the requests from friends, trying to share a bit with all. As a side note, I've also been experimenting lately with canning meat & stews. I took about 5 pounds of the stew meat and made a great batch of red chili, then canned/jarred it in 16oz jars in the pressure cooker. Loving the canning/jarring for long-term storage! S.
