Who has the best steak in town?

Coues loin lightly marinated in olive oil, Worchestershire, Garlic Salt and black pepper. Grill rare to medium rare and served on a bed of wilted beet greens. Melt in your mouth tender and all sweet red meat and no fat.

    Roosevelt catfish tactics

Just got back from Rosy and the wind has made things tough. No bluegills spotted in three days of fishing with the kids. Bass bite late morning to early afternoon if the wind doesn't blow you off the lake. No catfish or carp bites either - carp are jumping but don't seem to be biting.

    2nd Amendment rally

Still a Rally in AZ... Just don't think a bunch of like minded folks getting together on TV will help. Imagine the media there - the story is twisted and the focus is on the sidearms in the crowd. Enter Giffords stage left and we have provided a photo opp for the left. Nothing we do will be portayed by the liberal media in any way that will help. Not saying do nothing. Just know thy enemy and don't play into their hand. I want to be out there with the "Don't Tread On Me" flag singing Yankee Doodle Dandy as much as the next guy but we are out numbered by the 47% that voted for O'Bama. Not AZ mind you - we seem to have it right. But we need to understand that there are 49 other states and they can and might impress their will uopn us. Why fan the flames. Careful, thought out action is the answer. Emotion is the card they want to play not us. JMHO and appreciate yours. Eric

    "Pat" Madden Nominated

Not sure an enforcement guy is what we need to help ensure the future of our sporting tradition. Unless we are all a bunch of redneck tards that need a cop mentality... Don't know the guy from Adam but think we need sound wildlife management decisions with a bit of real world common sense. Would take a guy with farming, ranching or business acumen over enforcement. I don't mind guys doing their job. Wardens that BS, talk shop, give tips on where game is and hunters aren't then get around to asking for your licence and tag get huge points and respect. No need to be sneaky or treat all hunters like they are crooks. As in all walks of life it's about respect and a bit of know how.

    2nd Amendment rally

Most of America already thinks Arizona is filled with wackos and gun nuts. Not sure how an AZ rally will help the national debate. No elected official in AZ with any hope of re-election will consider anti-gun legislation at this point. Support (financially if you can) NRA and national groups. Nothing gained and probable harm throwing AZ in the fray. JMHO Eric
  12. Purchased a 3 year membership to the NRA today. Takes money to file lawsuits. Hope they are experiencing a huge increase in membership.

my first lion with my own dogs

Sounds like things are coming together nicely. I been out as much as I can. Tried the snow a few times but seems that 99% of the roads are closed by the FS. Khloe is gaining confidence and running tracks of her own. Had em on a hot bobcat track a couple weeks back but it gave them the slip. I think it may have treed in some thick stuff and they overran it. Tricky buggers. Sucks not knowing what happened. Gonna get after it again this week. Keep up the good work!

Pigs in 37B - numbers low?

Can't seem to run my dogs anywhere off the box canyon road or by the florence military reservation without pig problems. Down in the rolling hills so no good vantage points for glassing. Bunch of caves and mines so maybe they like all the places to hole up? Good luck!

    Late Rifle Bull 4A

Nice bull. This late hunt was certainly tough. Only saw elk at or before first light and late dusk. I believe they were active all night due to pressure, warm weather, and full moon. Glad you were able to walk one up.

    Venison Tamales

Anyone have a good tamale recipe? I am going to do some this weekend. Will probably do 1/2 venison and 1/2 pork meat mixture.

    Venison Tamales

Ok so I have to say our project was a huge success. We cooked a 3 lb elk roast and about 2 lbs of pork butt in the crock pot with some dried chiles, green onion, and oregano from the garden untill fall apart tender. Simmered Food City brand dried chiles with onion, garlic, and cilantro cubes (by Knorr from Food City). Pureed the chile mix in the blender then mixed the shredded meat with the chile puree. Added chipotle powder to some and left some mild for the kids. Then we prepared the masa. We bought 5 lbs of unprepared masa from Food City. Whipped 1 lb of salted butter in the bowl, added 5lbs of masa, 2 tsp baking powder, and about 2 cups of chicken broth/crockpot meat broth and a bag of frozen corn. Mixed well, + Soaked the husks for a couple hours while watching football and enjoying a beer. Rolled tamales with a generous helping of meat and a green olive. Had fresh green chiles from the garden so added them to some for variety. Tied with a strip of husk because I like it that way... Steamed for 45 minutes in a big tamale pot. And then enjoyed on the fine Sponge Bob china with the kids. A fine way to spice up the holidays and enjoy the bounty of nature. Also made smoked chicken leg tamales, green chile and cheese, and ground chicken and tomatillo tamales. All great but I prefer the classic red hot tamale. Not so bad with some extra hands and tamales to fuel us on the late hunts.

    First cat on cam !!

I am new to hunting with hounds and would love a chance to hunt where lions have recently been. I have a couple hunting partners and we would run any lions you spot or have hanging around on cam. Just looking for the chance to get my hounds on lions. PM me if interested.

    PIG - VS- PUP

Glad your pup is ok. Got into pigs on Thanksgiving morning and was thankful that we came away without getting cut up. My dogs had this one bayed up in a cave. Couldn't see what was in there so I crawled in a bit and took some pictures. Glad he decided to stay put...

    2013 elk recomendations

I have to agree with Flatlander. We don't all hunt for the same reason and a quality hunt means different things to different people. If everything is managed for trophy "quality" then others miss out on the opportunity to hunt. Quality, to me, right now, is spending time in the woods with family. I might miss my window of opportunity getting my kids involved if they have to wait 5+ years to draw a Jr. tag. I think they do a pretty good job balancing each of our wants along with sound management. As to the number of hunters in the field, there are some areas that it is very difficult to get away from people. Not every unit but some it seems like it just can't be done. But we seem to be talking out of both sides of our mouths. Complain about travel management (road closures) and then complain about there being a road on every ridge and in every canyon. Just like there are different hunts for different definitions of quality there are units that afford easy road access and those with few roads and rough country. Pick your poison and enjoy it.
