    I’ve done it with white tail and mulie and it’s really good! These elk shanks are gonna be cooked similar but without the rice stuff. I’ll use taters instead.

    Chorizo and bone broth have been my favorite. I’ve done meatloaf, burgers, chicken fried steak, and chili also. What I’m looking forward to the most is the braised shanks.

    Tester patty…. 2lbs bacon, 8lbs elk meat. Too much bacon. I’ll get beef fat tomorrow to even it out. Tenderloin tomorrow.

    It’s like an enchilada casserole. I’ve been eating it my whole life but only ever heard it called king ranch casserole about a year ago.

    Pussy! Lol joking!!! A light sear on fish like that is the way to go if you’ve never cooked it. It’s still rare and it’s cooked. Add your favorite sauce and serve over a bed of greens. You won’t hate it.

    Piccata as mentioned above is good. Raw is also good. If you’re doing tacos just grill it. Pan seared and served on a salad is awesome too.
