So how have you been cooking your dove?
muledeerarea33? replied to Chef's topic in Cooking Wild Foods
Milk, butter milk, wine, and salt water are dehydratints.ifeat is soaked in any of them it gets rid of the bloody/wild taste of most game meat. Not completely but darn near. I'm a fan of the natural taste personally but if I'm cooking for others not used to very lean livery meat, I'll soak overnight. Which dehydratint you use depends on what recipe you use. Milks... Make good breaded or fried meat, red wine.... Makes good recipes such as dove and rice, mushroom sautéed fowl, baked and stuffed, etc. I don't use thesalt water method hardly ever since I'm not a fan of salting food. Many say salt adds flavor but if cooked right, salt is on the table for those who season after. My favorite dove recipe? In a cake pan, raw flavor, latticed atop with bacon and hatch chili, in the smoker for about a hour. Served with asparagus or Brussels sprouts and Dutch oven biscuits. -
What's your favorite dove ammo so far this year?
muledeerarea33? replied to Scooter's topic in Small Game, Upland Bird, and Waterfowl Hunting
I've been using the estate ammo the past few years, the high and low brass is really good stuff, I haven't shot the alum. stuff. I still have a supply (dwindeling that is) of winchester high brass that I bought at Jensons in tucson for $1.50 a box at their going out of business sale several years ago. -

I had a higher chance of of my plane crashing on my flight to Cali last week, or being attacked by a "California bear" if you catch my drift hahaha, than you do from a bear or lion. -
Hang um loud and proud! My wife wasn't into the whole deer head cabin look for a long time (5+ years) the one day out of the blue she says, "why don't you ever hang up any of your antlers or furs?" I was like, ummmm? Yes ma'am!! Haha and up they went. I guess she just got tired of the pile on the counter.

Most, not all of these fires started, no matter the cause, nature, human, or scum bag! Are allowed to spread because there's a lack of urgency in forestry. To many regulations and red tape, just to clear and clean forest lands. I realize fires also are started in manzanita and junipers but that needs to be cleared just like the pine and oak country. If they allowed more logging, wood cutting, and clearing permits, fires would be greatly reduced no matter what the initial ignition source is. 100 + years ago if a fire started, Mother Nature cleared the land. Now a days with people living in the potential burn areas, we need proper and harsh management.
