Take care of the meat guys!

+1 on boning them out in the field. If done correctly, you'll have a pile of entrails, ribcage, backbone and hide (if no taxidermy) left out for the coyotes and ravens. I prefer to leave the bones in the hams and shoulders (gotta have a few soupbones!) I carry a handful of homemade game sacks (look like pillow cases) and get the chunks of meat into them to cool everything down as well as keep the bugs, and debris off. Meat gets transferred to plastic bags before going on ice. Keeping the meat dry inhibits the growth and spread of bacteria that can spoil the meat. -

I like ample eye relief and low mounted scopes. A leupold 6.5-20X40 affords me both. Add an m1 elevation turret and I'm a happy camper.... -
+1 on the scoring it yourself. I'm thinking your older deer will win out though, but that's just a wild guess...

Nothing wrong with the Howa 1500 (Mossberg, S&W, Weatherby Vanguard, and proabably a few others). All the same action and all capable of excellent accuracy.

If you're looking to save some money, you might want to consider dropping down to a good 10X bino. I've seen Ziess classics as low a 500 clams used. I sat behind a pair of Swift Kestrels ($200-$250) for many years and didn't feel handicapped by the 10X. -
