Sandhill Info, Guide, Direction?

We keep the leg and thigh meat, makes really good jerky.

That makes sense. We kept all the legs. I was going to have my wife braise them or something and slow cook them for soup.

It takes a while to de-bone the legs because there's a ton of bones. You might think im crazy after you try doing it. The thighs are easy peasey. I made a batch of jerky on the pellet smoker and its really good.
