Nice work! Doing it youself is definitely the best way to do it. I started doing my own a couple of years ago. I definitely get better meat and more of it. I do my own jerky, brats, Italian sausage, etc, but haven't tried summer sausage yet. I'm definitely going to give your recipe a try.
