Venison steaks with creamy mushroom onion and garlic sauce

Took my boys frozen roasts and thawed them in the smoker before cutting into butterfly steaks.

Sauteed garlic, onion and mushrooms down and added cream and simmered it down. I added a bit too much dalt but still came out good.

Enoch was on sauce patrol, he did a fine job.

It does, ill run hot water over them while in vac seal just to get the plastic off. In this scenario i just set the smoker to lo temp smoke. But i also have pellet tubes that i will sometimes use to supplement smoke when using the pellet grill. I highly recomend them as i like a heavier smoke profile. This was partial reasoning for squaring the ends of the roast and freezing instead of just cutting steaks. I knew they would be frozen when needed and thawing this way avoids drying the game meat out.
