Sting Ray(Manta)/Agua Chili

Got a kilo of Stingray filets from La Cima, thawed out/soaked in salt water, dry/drain, mexican lime juice/soy sauce/alittle garlic/lemongrass tea/chili powder/ butter, wrapped in foil, baked @400 for 20mins...

 

Agua Chili, small raw whole shrimp, lime juice, cucumbers, red onion, chili paquin, w/beans/torts for a before dinner snack...

 

Served w/pork refried beans/rice/torts and colddd beer... Yummm...

Ive always wanted to try sting ray. You think they could be used in ceviche?

 

 

You can spear them all day long in Belize, right under the boat docks.

Sure thing DesertBull, we had them make some on Turneffe atoll from a little ray i caught on the flyrod...

 

Scallop taste...

What is the texture like? Also always wanted to try it. Seems like it would be chewy?

It is fine, tender/flakey, be carefull you dont over-cook/dry it out... Going to make tacos with the rest of it...

Looks fantastic. Idk about the raw shrimp though...

 

My nephew married a chick from Venice Louisiana who would do that, she was a real piece of work.
