Elk Soup

Elk roast enchilada soup. 
brown meat, add onions cilantro jalapeño tomatoes and deglaze pan. Add green chili’s chicken stock and enchilada sauce. Add Mexican oragano salt pepper and corn. Simmer 10 minutes. Pull elk meat , Slice elk meat up and add back to pot. Squeeze in two lines worth of juice and lime zest. 
In a bowl place some refried beans on bottom of plate, pour soup over beans, sprinkle soup with Sour cream cilantro jalapeños onions avacodo and tortilla strips and squeeze lime over top.
