What's for dinner tonight?

Lunch today, spinach salad with bacon, fresh mozzarella, cucumbers, yams, and croutons, with a balsamic ranch reduction!

What blue cheese do you use. I have hard time getting mine to melt sometimes.

Use this. But it still doesn't melt fast enough, usually forget to put it on sooner.

The real secret, torch it use the small butane torches and it helps melt it.  This steak was torched.

I made homemade shrimp gumbo for Thanksgiving this year from scratch including broth. Very, very good....

Wow great call on doing something different for Turkey day.  That looks delish.  Is it on the thicker or thinner side?  I may have to make this for new years.

Its in the middle. Texture is all about the initial roux. This is medium darkness which takes about 30 minutes to do. Do the roux for 10 more minutes and thickness doubles. I like it medium like this.
