PRDATR Report post Posted 10 hours ago I love gumbo. My brother lives in way south Louisiana so I get to eats lots of gumbo 4-5 times a year. There are lots of variations. Almost everyone has their family recipe handed down for generations. One thing they all have in common is a dark roux. For me I like either a chicken gumbo or a seafood gumbo and like to have some okra in it with just the trilogy. The nice thing is the supermarkets have a whole isle dedicated to spices roux's. Most carry 4-5 different types of andouille. It's all about the roux. He lives right on a bayou so we just walk a few houses down and get fresh shrimp right off the boat for a few dollars a pound. I just bought a 17' Xpress and he picked it up a few weeks ago and took it out on Saturday for a run. I'll be down at the end of February for five days to get the little things fixed and do a few days of fishing.
