Feel like I just wasted 3 minutes of my life. He needs a whole lot less face time and more detail. Did he toss dirt right on the burlap?

thats a lot meat.

 

 

so what do you put on top of the meat in the pit? just on the grate then put a lid on it? or is there some kind of heat on top of the meat in the pit also

Dirt acts like a top. Meat is sealed against contamination with the tin foil. Turns into a slow cook oven. I just burned mesquite for a night at Apache and it took 3/4 of a five gallon jug before the coal bed stopped boiling.
