Year old yellowtail, that amazing. Looks good

This YT and YFT from last year was done by 5 Star Fish Processing.    I had them do 5 mil bags, all the fish looks 100% like it was caught yesterday.  The stuff I vacuum seal, has a 3 to 6 month freezer life.

Fish tasted as fresh as if was that days catch.

Saw they We’re catching yellowtail from kayaks over there in San Diego in a recent report

There are a few guys that do kayaks and solo skiffs.  I watch this kid SD Fish and Sips https://www.youtube.com/@SDFishandSips, he even does some prep and cooking too.

Not for dinner tonight, but a little light food prep for the week.

Habaneros are getting ripe.   Will likely match them with some mangos as soon as I can get to the Asian store for some good ones.   Made some pico today with store bought produce (jalapeños not ripe yet…).

Fry’s has whole brisket on sale, for anyone interested.  Just put this on to smoke over night

Downside of sticking with my old garage sale smoker is that it won’t fit a whole brisket! 😭 Had to cut off the short end. (Will smoke it separately tomorrow night…)

Bon appétit, all!
