Prime rib excellent!  We do prime rib in the smoker overnight, about 13 hours or so and let it rest in the cooler for about 3 to 5 hours.  Comes house killer.

I thought it would take significantly longer than it did. Even with the temp stable and where I wanted it, it cooked quicker than anticipated. But it got to rest for a long time and was delicious.

Looks like it needed another hour in my opinion. I love how it looks but my eaters need a bit more.

Mine come off at 122 to rest.  I hate OD’d  beef

I eat prime rib rare to med rare.  Tri tip is med rare.  Now I am hungry again.

Dinner, summer time baked yellowtail tacos with citrus marinated red cabbage, diced rainbow of bell peppers, green onions and cilantro with avacado and some cholula.
